Blue matcha is powdered butterfly pea flower. It is not tea, it contains no caffeine, and it comes from a plant so distant from the tea bush that the two sit in different botanical orders. It is a pleasant drink and a genuinely beautiful one. It is just not matcha, and the internationally agreed definition of matcha says so in one word: exclusively.
I get asked about this more than almost anything else, usually by someone who saw an electric blue latte in a cafe and wants to know whether they have been missing out on something. The honest answer is no, and also yes. No, you have not been drinking an inferior matcha. Yes, butterfly pea is worth trying, on its own terms, under its own name.
What is blue matcha, actually?
Blue matcha is dried butterfly pea flowers, ground to a powder. The plant is Clitoria ternatea, a climbing legume native to tropical Asia, and it belongs to the family Fabaceae, in the order Fabales (GBIF Backbone Taxonomy, retrieved 4 September 2026). Peas, beans, lentils, clover. That is its neighbourhood.
The tea plant is Camellia sinensis, family Theaceae, order Ericales (GBIF). Blueberries and Brazil nuts are closer relatives of the tea bush than butterfly pea is.
That distance matters more than it sounds. When two plants sit in different orders, they are not variants of one another. They do not share the biochemistry that makes tea taste like tea, or the compounds that make matcha do what it does in the body. You are looking at a flower and a leaf from two unrelated branches of the plant kingdom, both of which happen to end up as a coloured powder in a cup.
There is also a part usage difference that gets lost. Matcha is made from leaves and young shoots. Blue matcha is made from the flower. Even if the two plants were cousins, you would still be comparing different organs of different organisms.

Why is blue matcha blue?
The colour comes from anthocyanins, specifically a family of pigments called ternatins. These are polyacylated derivatives of delphinidin 3,3',5'-triglucoside, and fifteen of them have been identified so far, catalogued as ternatins A1 to A3, B1 to B4, C1 to C5 and D1 to D3 (Vidana Gamage et al., Frontiers in Plant Science, 2021, PMID 34975979).
Anthocyanins are the same broad pigment class that makes blackcurrants dark and red cabbage red. They are common. What is unusual about butterfly pea is the acylation, the extra chemical groups hung off the core structure, which is what holds the blue stable instead of letting it drift toward red.
Matcha's green has a completely different origin. It comes from chlorophyll, concentrated by weeks of shading before harvest, alongside the amino acids and catechins that shading also drives up. There is no pathway by which a tea leaf produces a ternatin, and no pathway by which a butterfly pea flower produces a catechin. The colours are not two versions of the same thing.
The lemon trick, and why it works
Squeeze citrus into a blue butterfly pea drink and it turns violet, then pink. Cafes use this as theatre, and it is a good trick, but it is also a straightforward chemistry demonstration.
Anthocyanins change structure with pH. Below about pH 2 the red flavylium cation dominates. Between roughly 3.2 and 5.2 the colour moves from violet to blue. From about 5.2 to 8.2 it holds blue, and above 8.2 it shifts toward dark green (Vidana Gamage et al., Frontiers in Plant Science, 2021, PMID 34975979). The underlying structures, the red flavylium cation at low pH and the quinonoid base near neutral, are set out in Hasanah et al., Polymers, 2023 (PMID 37299340). Adding acid walks the drink down that scale.
This is also the single fastest authenticity check I can give you. Matcha does not do this. Add lemon to a bowl of matcha and you get matcha with lemon in it, slightly duller, faintly separated, and still green. If the powder in front of you changes colour with acid, it is not tea. Why the word "matcha" does not fit
This is the part where I want to be precise rather than territorial, because "that's not real matcha" is a phrase people throw around carelessly.
There is an internationally agreed definition. ISO/TR 21380:2022, Matcha tea, Definition and characteristics, was published in April 2022 and drafted with Japan's National Agriculture and Food Research Organization leading the work. Its definition reads that matcha is tea derived "solely and exclusively" from tender leaves, buds and shoots of Camellia sinensis var. sinensis, grown under shade, enzyme-inactivated by steaming, dried without rolling, and finely ground into powder (ISO/TR 21380:2022, clause 3.1; the drafting work is described by NARO).
"Solely and exclusively" is doing real work in that sentence. It is not a stylistic flourish. It closes the definition to one species, and butterfly pea is not it.
The standard also spells out what the process requires: shading that starts at 70 to 80 percent light shielding and rises to 95 to 98 percent, shoots plucked after 20 to 30 days, steaming for 15 to 30 seconds at 100 degrees Celsius, drying in a brick-walled tencha-ki, stems and veins removed, then grinding on a stone mill to particles of 10 to 30 micrometres. That intermediate dried leaf is tencha, and the slow stone grind is a whole subject of its own, which I covered in why the grinding method matters.
Butterfly pea powder goes through none of those steps. The flower is dried and ground. That is the whole process, and there is nothing wrong with it, but it is not the process the word describes.
The word itself points the same direction. 抹茶 combines 抹, a character meaning to rub or smear, with 茶, tea. The Japanese dictionaries define the compound by the action: leaf tea ground in a mill into powder (Daijisen and Nihon Kokugo Daijiten, via Kotobank). Matcha names a way of treating a particular leaf. I went deeper on this in what the word matcha really says.
Worth knowing: even inside Japanese tea, "green powder" is not automatically matcha. 粉茶 (konacha) is sencha dust. 粉末茶 (funmatsucha) is ground processed leaf. 抹茶 is shaded, unrolled, stone-milled tencha. Three products, three names, all green, all powder (Tokyo Metropolitan Tea Cooperative Association). The Japanese trade has been careful about this distinction for a long time.
Does blue matcha have caffeine?
No, and the reason is more interesting than the answer.
Caffeine is not a compound that most plants make. It is confined to a short list of lineages, and the genetics show that even those few arrived at it separately. A 2025 genome study of yerba mate found that Ilex converged on a different biochemical pathway to caffeine than coffee and tea did, which is why the trait is described as convergently evolved rather than inherited from a shared ancestor (Vignale et al., eLife, 2025, PMID 39773819). Coffee, tea and mate each arrived at it separately. No legume is known to have made the same jump.
The FDA's own compositional description of butterfly pea flower extract backs this up from the other direction. Its constituent list runs to water, carbohydrates, proteins, anthocyanins and flavonols (86 FR 49230). No alkaloid appears among them, and caffeine is an alkaloid.
So butterfly pea is caffeine-free by botany rather than by processing. Nothing was removed. It was never there.
Matcha is the opposite case. You are drinking the whole leaf, so you get the whole leaf's caffeine. One review of matcha composition reports a range of 18.9 to 44.4 mg per gram (Kochman et al., Molecules, 2020, PMID 33375458), which puts a typical 2 g bowl somewhere in the region of 38 to 89 mg. That is a wide band, and I would rather give you the band than a falsely precise number, because published measurements do vary by grade and by method. More on that in is matcha caffeinated.
The practical upshot is simple. If you want something to drink at nine at night, butterfly pea is genuinely useful and matcha is not.
What the FDA calls it, and what that tells you
Here is the fact that surprised me most when I went looking, and it is a matter of public record.
The FDA regulates butterfly pea flower extract as a colour additive. It is listed at 21 CFR 73.69, in the subpart covering colour additives exempt from certification for use in foods (21 CFR 73.69). The original final rule was published on 2 September 2021 at 86 FR 49230, effective 5 October 2021 (Federal Register, govinfo.gov), covering sixteen food categories including teas, hard candy, ice cream and various drinks. A later order published 12 May 2025 at 90 FR 20101 added six more, mostly snack foods such as ready-to-eat cereals, crackers, snack mixes, hard pretzels and plain potato and corn chips, effective 26 June 2025 (Federal Register).
The regulation describes it as "a dark blue liquid prepared by the aqueous extraction of dried butterfly pea flowers from Clitoria ternatea," with anthocyanins as the principal colouring component.
Now search that same colour additive register for matcha, or green tea, or Camellia sinensis. There is no entry. Matcha is not a colourant. It is a food, and it is coloured because of what it is rather than to make something else look a certain way.
I do not raise this to score a point off butterfly pea. Being an approved colour additive is a mark of safety review, not a slur. But it does describe how the two things function. One is a beverage made by grinding a leaf. The other is, in the regulator's classification, a dye that is also nice to drink.
Is blue matcha good for you?
The honest answer is that we do not really know yet, and I would be careful with anyone who tells you otherwise.
There is a lot of laboratory work on Clitoria ternatea. There is very little human work. A 2025 review in Plants, written by researchers who are clearly enthusiastic about the plant, states it plainly: most available evidence comes from preclinical studies, with limited clinical validation to date, and further human studies are needed to confirm the efficacy and safety of the reported effects (Maia et al., Plants, 2025, PMID 41225871).
The most-cited human trial I could find had fifteen healthy young men complete a randomised crossover design, each sitting measured over 180 minutes with a week between them (Chusak et al., BMC Complementary and Alternative Medicine, 2018, PMID 29310631). The authors themselves note the results cannot be generalised beyond that group. Fifteen people who finished, a handful of sittings each. That is a reasonable place to start a research programme. It is not a basis for telling you what a drink will do for you.
Individual response varies. If you manage a health condition, talk to your doctor before changing what you drink regularly.
My own position is that butterfly pea does not need a health story. It is a striking colour, it is caffeine-free, it tastes mild and faintly vegetal, and it makes a drink that people enjoy looking at. That is enough. The hype around it is the least interesting thing about it.
How to tell them apart
Four checks, in order of speed.
- Colour. Matcha is green, from a soft spring green to a deep jade depending on grade and freshness. If it is blue, it is not tea.
- Acid. Add lemon. Butterfly pea shifts violet then pink. Matcha stays green.
- The ingredient line, not the front of the pack. "Blue matcha" is a marketing name and it is not regulated as a tea term. Turn the tin around. You are looking for butterfly pea flower, Clitoria ternatea, or blue pea flower. Real matcha lists one ingredient: green tea. If a product says "blue matcha" and the ingredients name a flower, the front of the pack is describing a colour, not the contents.
- Origin and process language. Matcha worth buying will tell you where it grew and often which harvest. Shade-grown, tencha, stone-milled, a named prefecture. Butterfly pea rarely carries any of that, because it is not made that way.
None of this is an argument against drinking butterfly pea. It is an argument for calling it what it is. I would rather you buy a blue pea flower tea knowingly than buy a "matcha" that turns out to be a flower.

Mild, faintly earthy and slightly vegetal, with much less body than matcha and none of matcha's umami or astringency. Most blue lattes take their flavour from what is added to them rather than from the flower itself.
Is blue matcha healthier than matcha?
There is no good evidence for that claim. Human research on butterfly pea is limited to a handful of small short trials, and a 2025 review in Plants notes that most evidence is preclinical with limited clinical validation to date. The two drinks are different products and are not interchangeable.
Can I use blue matcha in a Japanese tea ceremony?
No. Japanese tea ceremony is built around matcha specifically, including how it is whisked and how it suspends in the bowl. Butterfly pea powder does not behave the same way and sits outside the tradition.
A closing thought
Words that mean something specific are worth protecting, not because tradition is sacred, but because a precise word saves you from buying the wrong thing. Matcha names a leaf, a way of growing it in shade, and a way of grinding it slowly on stone. Butterfly pea names a flower that happens to be a beautiful blue.
Both belong in a cup. Neither needs to borrow the other's name.
