What "ceremonial grade" means on this page
Ceremonial grade is not a certified or regulated term, which is exactly why it gets used loosely. What we mean by it is specific: young leaves, shade-grown, stems and veins removed before milling, and ground on stone rather than in a high-speed mill that heats the powder. That is what produces a bright green colour, a fine texture that suspends in water, and a cup you can drink without sweetening. If a matcha is dull, sandy or sharply bitter whisked plain, it was probably picked later or milled hotter.
How to whisk a bowl
Sift one to two scoops into a dry bowl, add a little water just off the boil, and whisk briskly in a W until the surface is frothy. Keeping it fresh
Matcha fades with light, heat, air and moisture. Keep it sealed, somewhere dark and cool, and away from the stove. Once opened, use it within a few weeks while the colour and aroma are at their best. Buying the size you will actually drink matters more than buying the biggest one.
