Almost everything written about Japanese green tea starts with the same sentence: Japanese tea is steamed, not pan-fired. That's what makes it taste green and marine instead of toasty. We've written that sentence ourselves.
It's true for roughly the whole category. It's also the reason the exceptions are worth knowing. Kamairicha is fired in an iron pan, not steamed at all. A handful of Japanese teas break that rule on purpose, and a few break a much bigger one: they're fermented by living microorganisms, which almost no Japanese tea is. These teas are rare in the literal sense. Some are made by a number of households you can count on one hand.
Here's what they are, how they're made, and what the official record actually says about how rare they are. Including one number that turns out not to exist.

What makes a Japanese tea rare?
Rarity in Japanese tea isn't really about price. It's about how many people still know a process, and whether that process survived mechanization.
Japan produced 75,100 tonnes of crude tea across 33,400 hectares in the most recent official figures, and sencha alone accounts for 49.7% of it (Japan's Ministry of Agriculture, Forestry and Fisheries (MAFF), Situation Surrounding Tea, 11 May 2026). The concentration is the story. Five named categories cover about 62% of production, and everything unusual lives in the remainder.
The pressure behind that concentration is real. Japan's total tea production fell from 96,000 tonnes in 2008 to 75,000 tonnes in 2023, and the number of tea-growing households fell from 45,645 to under 20,000 in the most recent count (MAFF, Current Status and Issues in the Tea Industry, November 2024). When more than half the farms disappear in fifteen years, the labor-intensive processes go first.

What is kamairicha?
Kamairicha is Japanese green tea where the leaf is fired in an iron pan instead of steamed. Both methods do the same job, which is killing the enzymes that would otherwise oxidize the leaf into black tea. The Japanese term for that step is sassei, kill-green. Steam does it with water vapor in seconds. A pan does it with dry contact heat, and dry heat leaves a signature that steam never does.
Peer-reviewed work on the pre-mechanization Ureshino method puts the pan above 300°C, with the leaf losing 30 to 35% of its weight during that first firing (Sakamoto, "Kamairicha Made in Inclined Pans", Tea Research Report 124, 2017). The prefectural agricultural cooperative in Miyazaki describes the traditional hand method with a pan nearer 400°C, leaf turned out onto a mat and rolled by hand, then dried slowly over charcoal (JA Miyazaki). Those two figures don't agree, and they describe different regions, so treat "over 300°C" as the number with peer review behind it.
What that heat produces is kamaka, pan aroma. Japan's agriculture ministry describes Miyazaki kamairicha as having a clear golden liquor with a toasty, clean aroma (MAFF, Introduction to Tea Producing Regions, August 2023). The chemistry behind roasted tea aromas is Maillard reaction products, pyrazines and pyrroles formed between sugars and amino acids, with 44 compounds identified in kamairicha in one analysis (Kawakami and Yamanishi, Journal of the Agricultural Chemical Society of Japan, 1999).
There's a second difference that surprises people. Kamairicha is less astringent than sencha, not more. Saga Prefecture's tea research station compared kamairicha, steamed tamaryokucha and sencha made from the same Yabukita cultivar and attributed the lower astringency to minimal kneading during production, which extracts fewer catechins relative to amino acids (Yamaguchi and Miyazaki, Tea Research Report 125, 2018).
Where kamairicha is made
Four prefectures, all named by MAFF. Miyazaki ranks first nationally for kamairicha production. Saga makes it around Ureshino. Kumamoto produces it alongside sencha and steamed tamaryokucha. Oita makes a pan-fired tea called Innocha in Saiki, and Oita is the one that English-language writing almost always leaves out.
The tightest figure available is for the district: the northwest mountains of Miyazaki, Nishiusuki County, covering Takachiho, Gokase and Hinokage, produce around 200 tonnes a year, the largest kamairicha output of any district in Japan (MAFF, August 2023).
The two styles: Ureshino-sei and Aoyagi-sei
Kamairicha splits into two historical schools, distinguished by the geometry of the pan. Ureshino-sei uses an inclined pan and is centered on Saga and Nagasaki. Aoyagi-sei uses a horizontal pan and is centered on Kumamoto and Miyazaki (Sakamoto, "Japanese Kamairicha", Tea Research Report 125, 2018, with the pan geometry described in the companion 2017 paper).
That tidy split is a modern simplification. That 2017 paper notes traces of inclined pans historically introduced into Kumamoto and Miyazaki, which then vanished quickly once mechanized tea processing arrived. The clean two-region map is what's left after the machines chose.
Why nobody can tell you what percent of Japanese tea is kamairicha
I went looking for this number because every article about kamairicha has one. What I found is that the official statistics don't contain it.
MAFF's reference table of tea types lists five categories with production shares: sencha 49.7%, tencha 7.3%, kabusecha 2.6%, tamaryokucha 1.9% and gyokuro 1.0%. Kamairicha isn't a row. It wasn't a row in the 2016 edition either. The price tables use the same structure, with no kamairicha column. It's absorbed into bancha and other green teas, which is where the missing 37.5% sits.
The figures circulating online can't all be right, and some can't be right at all. One widely repeated claim puts kamairicha at 0.02% of Japanese tea, which would be roughly 15 tonnes nationally. Nishiusuki County in Miyazaki alone makes about 200 tonnes. Another attributes 1,160 tonnes of kamairicha to Miyazaki, which is 40% of the prefecture's entire 2,880-tonne output across every tea type, in a prefecture MAFF describes as making sencha and steamed tamaryokucha throughout while kamairicha stays in the northwest mountains.
So the honest answer is a rank and a district figure, not a percentage. Miyazaki is first in Japan. Its northwest mountain district makes about 200 tonnes. Against a national total of 75,100 tonnes, that district is about 0.27% of all Japanese tea, and that's a district number, not a national kamairicha total.
What is tamaryokucha?
Tamaryokucha is Japanese green tea made the standard way, with one step removed. MAFF's definition is exact: the leaf is steamed, rolled and dried like sencha, but there's no seijū, the final rolling stage that straightens the leaf into a needle. Without it the leaf keeps the curl it picked up during earlier rolling, so it stays rounded (MAFF, 11 May 2026).
That single omission is the whole tea. Sencha's needle shape is manufactured at the last minute, and tamaryokucha is what the leaf looks like when you don't do it.
The curl gets compared to magatama, the comma-shaped beads from ancient Japan. MAFF uses that comparison for Ureshino tea and also uses the nickname guricha as a straight synonym for tamaryokucha in the same August 2023 profile, which is the cleanest confirmation of that alias you'll get. Where the name guricha came from is less settled. The reading offered by producer bodies in Kumamoto and Sonogi ties it to the curled magatama-like shape. Other origin stories circulate, including one tracing it to a regional expression in Izu, and I couldn't find a primary source for that one.
Tamaryokucha's two sub-types
Tamaryokucha comes in a steamed version and a pan-fired version, and the names are worth having straight:
- Mushisei tamaryokucha (蓊し製玉綠茶), steamed. MAFF describes it as fresh in aroma with a full savory body.
- Kamairisei tamaryokucha (鏃炒り製玉綠茶), pan-fired. Toasty, with a cleaner finish.
Oita is the clearest illustration because the prefecture makes both and names them separately: Kicchomu tea (吉四六茶) is the steamed one, Innocha (因尾茶) is the pan-fired one (MAFF, August 2023). The pan-fired branch is where tamaryokucha and kamairicha overlap, which is why the two teas are so often confused.
Where tamaryokucha is made, and how fast it's shrinking
MAFF names three principal producing prefectures: Saga, Nagasaki and Kumamoto. Kumamoto ranked third nationally in the most recent figures. Saga was ranked first as of the 2016 edition. In Nagasaki, Sonogi tea from Higashisonogi is the prefecture's flagship steamed tamaryokucha, and as of MAFF's August 2023 profile it had taken the Minister of Agriculture's award in the steamed tamaryokucha division of the national tea competition four years running.
Tamaryokucha fell from 3.2% of Japanese tea production in 2014 to 1.9% in 2024, a relative decline of about 40% in ten years, while its average crude tea price rose from 1,430 to 1,804 yen per kilogram (Japan's Ministry of Agriculture, Forestry and Fisheries, May 2016 and 11 May 2026 editions).
Tamaryokucha was 3.2% of Japanese tea production in the 2016 edition and 1.9% in the 2026 edition, a relative decline of about 40% in ten years, while the average crude tea price rose from 1,430 to 1,804 yen per kilogram. At 1.9% of 75,100 tonnes that's roughly 1,400 tonnes, though MAFF publishes the percentage and the total without printing that multiplication, so treat it as approximate.
One caveat I'd rather state than hide: MAFF's tamaryokucha definition describes the steamed route only. Whether the 1.9% includes pan-fired tamaryokucha isn't stated anywhere I could find.
Japan's fermented banchas
Japan has exactly four post-fermented teas, fermented by molds and bacteria after the leaf's own enzymes have already been killed by heat: goishicha, awabancha, Ishizuchi kurocha and batabatacha. That makes them the only Japanese teas fermented in the way miso and pickles are fermented, and it's a much bigger departure than pan-firing or a skipped rolling step.
Japanese green tea is not fermented. Not in any sense. The leaf is heated immediately to kill its own oxidative enzymes, and nothing ferments it afterwards. Black tea and oolong are called fermented, but that's the tea trade using the word loosely for enzymatic oxidation driven by the leaf's own polyphenol oxidase. No microbes involved.
Post-fermented tea is different, and MAFF's definition is precise: tea made by stopping the leaf's enzyme activity with heat, then fermenting the leaves with the power of microorganisms (MAFF, aff magazine, April 2022). Kill the leaf's own chemistry first, then hand it to living organisms. That makes these teas microbiologically closer to miso and pickles than to sencha. They share the word bancha with ordinary late-harvest bancha and almost nothing else.
Japan has four of them. Peer-reviewed work states it plainly: "Four types of post-fermented tea are produced in Japan" (Nishioka et al., Microbes and Environments 36(4), 2021). MAFF's April 2022 feature names the same four independently. Three are in Shikoku and one is in Toyama.
Goishicha, Kochi
Goishicha is made in Otoyo Town, Kochi Prefecture. It's the only one of the four with a two-stage fermentation, and both stages are documented by the prefecture and by peer review.
- Aerobic, mold-driven. Steamed leaves are laid out and left about a week while molds resident in the building work on them.
- Anaerobic, lactic-acid-driven. The leaves are packed into wooden barrels, weighted with stones, and left to ferment again. MAFF's goishicha profile puts this at about two more weeks; its aff magazine feature says about another week.
- Formed and cut. The tea is pressed into solid blocks and cut into pieces.
A 1996 study identified Aspergillus, Penicillium and Scopulariopsis species in the molded leaves, and Lactobacillus plantarum as the sole lactic acid bacterium in the barrel stage (Okada et al., Nippon Shokuhin Kagaku Kogaku Kaishi 43(9), 1996). The paper proposes that the mold damages the leaf and the bacteria then feed on what leaks out, and it frames that as a considered explanation rather than a settled one.
The name is generally understood to come from the leaves resembling black go stones laid out to dry, though the official sources hedge it and differ on the exact image. MAFF describes leaves laid out looking like black go stones. Otoyo Town says the leaves spread on straw mats resemble stones arranged on a go board, and phrases it as "it is thought". Nobody offers a dated record, so it's a reading rather than a documented etymology.
Goishicha nearly died. Production fell to a single farming household, and it has since recovered under a local cooperative. The most recent town survey, covering 2022 to 2025, counts two farming households and one corporation. An older MAFF page says four households and one corporation, and an older town page says seven or eight. Those are official numbers that disagree, so the truthful version is: a handful, and it came back from one.
On 24 March 2026, the goishicha manufacturing technique was designated a national Important Intangible Folk Cultural Property. Kochi Prefecture published the announcement in May 2026 (Kochi Prefecture, newly designated national cultural properties). That designation is recent, and there's almost nothing about it in English yet.
Awabancha, Tokushima
Awabancha is made in Tokushima Prefecture, in Kamikatsu, Naka and Minami towns, with production in Miyoshi in recent years as well.
Awabancha is single-stage and anaerobic, with no mold step at all. The sequence is:
- Leaves are picked and boiled until they turn brown.
- They're kneaded in a machine, which scratches the leaf surface.
- They're packed into a barrel to keep air out and weighted with a stone.
- They ferment anaerobically for two to several weeks.
The research identifies Lactiplantibacillus pentosus as dominant in Naka and Kamikatsu and Lactiplantibacillus plantarum as dominant in Miyoshi (Nishioka et al., 2021). The same paper says of the method that no other tea in Japan is made in a similar way.
The contrast with goishicha is clean. Goishicha steams, then molds, then pickles. Awabancha boils, scratches the leaf surface by kneading, then pickles. One fermentation, not two.
Its manufacturing technique was designated an Important Intangible Folk Cultural Property on 11 March 2021 (Agency for Cultural Affairs). It's often described online as GI-registered, and it isn't. Tokushima Prefecture's own list of registered geographical indications contains four products, and awabancha is not among them.
Batabatacha, Toyama
Batabatacha is made in the Hirudani hamlet of Asahi Town, Toyama Prefecture, and it's the outlier of the four in every way.
It's aerobic and single-stage, and the mechanism is heat. The sequence is:
- Leaves are steamed to stop their own enzymes.
- They go into a fermentation chamber and are held near 60°C.
- They're turned every two or three days for roughly five to six weeks (MAFF, April 2022).
- They're sun-dried to halt fermentation.
That self-generated heat selects for organisms nothing else in Japanese tea selects for: Aspergillus fumigatus dominant among fungi, then Thermomyces lanuginosus, with Bacillus coagulans among the bacteria (Horie et al., Journal of the Japanese Society for Delicacy Technology 18(2), 2019).
Then there's how it's drunk. The tea is simmered, poured into a dedicated bowl called a gorohachi-jawan, and whisked to a foam with a chasen (Kurobe City). The whisk is traditionally described as a bound pair, though I couldn't find a government or academic source that states it, so treat that as reported practice rather than documented fact. The name is onomatopoeic, from the batabata of the whisking motion, as Kurobe City's tourism page describes it.
It isn't a solo drink. Batabatacha is a communal gathering, held at memorial observances for ancestors and at celebrations like weddings and births. Asahi Town runs a Batabatacha Transmission Hall in Hirudani where residents still gather and visitors can join.
And the fourth: Ishizuchi kurocha
The fourth is Ishizuchi kurocha, made in Saijo, Ehime. Like goishicha it's a two-stage aerobic-then-anaerobic ferment, and it shares a cultural-property listing with goishicha and awabancha as one of the fermented tea manufacturing techniques of the Shikoku mountains. It's outside what I set out to cover here, but leaving it unnamed would make the count wrong, and the count is the point.
How these teas compare
Six teas, three ways of being unusual: the pan instead of the steamer, the missing shaping roll, or living microbes. Only the last four are fermented in any real sense.

How to brew them
Two of these you can approach like other Japanese green tea. Four you can't, and I'd rather tell you what the sources describe than invent numbers.
Kamairicha is the forgiving one. Because it's kneaded less and extracts fewer catechins relative to amino acids, it carries less astringency than sencha, so it tolerates hotter water better than a delicate sencha does. Start hotter than you would for gyokuro and let the toasty aroma come forward. If you overshoot, you get less punishment than sencha would give you.
Tamaryokucha brews much like sencha, since it's the same process minus the last shaping step. The curled leaf opens more slowly than a needle, so give it slightly longer to unfurl before you judge the strength.
The fermented teas are decoctions, not steeped teas. Batabatacha is simmered, then whisked to a foam in its own bowl with its own twin whisk. Goishicha is a block tea, cut and boiled. These are prepared closer to how you'd make a broth than how you'd make sencha, and the traditional method is part of what's being preserved by those cultural property designations. If you get hold of any of them, follow what the producer tells you rather than a generic green tea chart.

I should be straight with you: we don't sell any of the teas in this article.
One with Tea sources organic Japanese matcha, along with sencha, kukicha, genmaicha and hojicha. Kamairicha, tamaryokucha and the four fermented teas aren't part of what we carry, and after researching them properly I understand better why. Goishicha is made by roughly two households and one company. That isn't a supply chain, it's a lineage being kept alive.
The reason to know about them anyway is that they show you what the standard process is choosing. Every time you drink sencha or matcha, you're tasting a decision to steam rather than pan-fire, to roll the leaf straight, and to keep microbes out entirely. Those decisions are so consistent across Japanese tea that they stop looking like decisions. The rare teas are what makes them visible again.
