I list four grades: Latte Grade (Organic), Ceremonial (Organic), Superior and Royal. For batter, fillings and soft serve bases, start with Latte Grade. Latte Grade and Ceremonial ship from our US stock.

Latte Grade (Organic)
For the matcha in your pastry case and your soft serve base. It is 100% organic matcha, with no sugar, no creamer and no milk powder, so the sweetness stays your recipe's call. USDA Organic.
Ceremonial (Organic)
For a straight whisked cup or a signature drink on your counter. Also USDA Organic.
Premium grades
Superior and Royal
Our premium Uji ceremonial grades, for a premium straight whisked cup or a tasting menu. They are not organic certified, and availability and lead time for both are confirmed in your quote.

How ordering works
Latte Grade from US stock is the in-stock route. The made-to-order row only applies to a larger run made for you in Japan.

- In-stock orders, first and repeat, are paid in full before shipping. They ship from US inventory, with no international leg and no customs on your side.
- Your written quote holds for 21 days.
- Made-to-order runs only: a 50% deposit reserves the run, the balance is due before shipment, and because it ships from Japan you are the importer of record, so customs and duty sit with you.
- Quote requests are open to US businesses only.

Order by the kilo
Your order size starts with one batch.
Weigh the grams of matcha in one batch, multiply by the batches you bake in four weeks, and divide by 1,000. That kilogram figure goes in the form's estimated volume (kg) field.
Your recipe sets the grams, so I don't publish a figure per croissant or per gallon of base. Your quote prices the exact kilograms you enter.
The calculator covers drinks only. For your drinks counter it does the math at 3 g a drink, the low end of the 3 to 4 g latte dose in our preparation guide.

Where it grows
You should know where your matcha grows before it goes into your batter.
I spent months visiting farms across Uji, Nishio, Shizuoka, Kagoshima, and Miyazaki, meeting the people who grow the tea, watching the stone-milling process, and documenting everything on film. There is more on our documentary page.
We buy through direct relationships with the farmers, with no broker chain in between, so you get one point of contact from order to delivery.
When you buy through a broker, you're trusting a middleman's word on quality. When you buy from us, you're buying from someone who stood in the field where your tea was grown.
We import in small, frequent batches to keep everything as fresh as possible, and I personally verify growing conditions every season.

Which grade do I bake with?
Start with Latte Grade, stocked in the US for batter, fillings and soft serve bases. Culinary is not one of my four listed grades (Latte Grade, Ceremonial, Superior and Royal). If it is what you need, tick Culinary on the form and we will find a solution together.
Is Latte Grade a premix?
No. Latte Grade is 100% organic matcha with nothing added: no sugar, no creamer and no milk powder.
Can I bake with it before I order?
Yes. Samples are available on request, so ask for them when I reply. Every written quote includes the sample terms.
Can I start with a small order?
Yes. In-stock bulk starts at 1 kg and ships from our US inventory, so a new recipe doesn't need a big first order.
How fast can I get it?
Latte Grade and Ceremonial are already stocked in the US, and your quote states the lead time. Made-to-order runs from Japan take 4 to 6 weeks from deposit to shipment-ready, with transit quoted on top.
What happens after I submit the form?
The price sheet that opens on submit is my general list. I read every quote request myself, and your written quote for your grade and kilograms follows within 2 business days and holds for 21 days. Once you accept, in-stock orders are paid in full before shipping.
How long does it keep?
Our pouches are nitrogen-flushed, heat-sealed aluminum. Shelf life is 2 years from packing, unopened and stored cool.
